Spooky Sandwich Cookies

Spooky Sandwich Cookies with Pumpkin Buttercream Filling

Here’s what you’ll need to make the sandwich cookies:

  • Your favorite sugar cookie dough
  • Yellow, orange, and black food coloring

And here’s what you’ll need to make the pumpkin buttercream filling:

  • 1/4 cup vegetable shortening
  • 1/4 cup (1/2 stick) butter, softened
  • 1 Tbsp pumpkin
  • 1/8 tsp cinnamon
  • 2 cups powdered sugar
  • 1 Tbsp milk

First, divide a batch of your favorite sugar cookie dough into three pieces.

Color each piece using a few drops each of the yellow, orange, and black food coloring. Wear gloves if you don’t want your hands to get messy!

Divide each of the three balls into thirds again, and roll out the thirds of dough into about 1/2″ thickness. Place one strand of each color next to the others.

Roll out the dough so that it becomes one piece, about 1/4″ thick. Cut circles from the dough using a cookie cutter or the top of a glass.

Bake the cookies however long they need to bake depending on the recipe you use. Mine took about 8-10 minutes.

While the cookies are cooling, make the pumpkin buttercream filling. First, beat together the shortening and butter until smooth. Add in the pumpkin and cinnamon, and then beat in the powdered sugar. Finally, add in the milk, beating until smooth.

When the cookies have cooled completely, spread the filling on the inside of one of the cookies. Top with another cookie. Repeat until all the sandwiches have been made.
